“Best New Chef” at Four Seasons This Weekend

This weekend only, Dan Kluger, the executive chef of ABC Kitchen in New York City will be on Maui and creating a special menu for DUO Steak and Seafood in the Four Seasons Resort Maui.

Voted Best New Chef by Food & Wine and Time Out New York, Kluger is also a James Beard Award winner for Best New Restaurant.

Known for his focus on local, sustainable and organic products, he will be teaming up with the Four Seasons Resort Maui’s Master Executive Chef Roger Stettler.

Chef Stettler shares a similar passion for local produce, and has been taking Chef Kluger around the island to his favorite Maui farms while he’s visiting.

“I’m excited to show Chef Kluger the vibrant produce our island has to offer and to have the opportunity to swap ideas with such a master of the trade,” says Stettler.

Chef Kluger has created a menu insert that will be featured along with DUO Steak and Seafood’s a la carte menu on Friday, Aug. 16, and Saturday, Aug. 17 only.

The menu features such items as an appetizer of raw island snapper with chilies, calamansi, and anise hyssop; a salad of Haiku heirloom tomatoes and Mysore raspberries with Surfing Goat cheese; and long line-caught grilled nairagi (striped marlin or a’u) with olives, shaved local baby fennel and jalapenos.

In addition, Chef Kluger will be available to meet those dining in the restaurant on Friday from 6:30 p.m. to 7:30 p.m. and Saturday from 5:30 p.m. to 6:30 p.m.
