Large helpings of breakfast proteins like thick-cut smoked bacon, Portuguese sausage and apple-stuffed chicken sausage will be available. For those with a sweet-tooth, blueberry buttermilk pancakes with macadamia nuts, crepes Normandy with Tahitian vanilla sauce and Grand Marnier soufflé French toast finish off the breakfast favorites station.

For seafood and salad lovers, Executive Kurt Lesmerises uses this holiday brunch to showcase Hawai‘i’s best ingredients from the land and sea. At the seafood and specialty salad station, try fresh sashimi, peel-n-eat shrimp, in-house smoked salmon, snap-n-eat Dungeness crab leg and an assortment of fresh made-to-order sushi. Salad selections include the usual array of Mākena Sunday Brunch salads along with some specialties, like the certified organic Kumu Farms baby greens with lobster, Maui onion, tomato and passionfruit vinaigrette. There’s also an Italian-influenced basil chicken and feta salad with organic spinach, toasted Macadamia nuts, baby tomatoes and crisp apple with a shallot-balsamic vinaigrette.

The brunch will feature roasted vintage New York strip loin with a wild spring mushroom ragu, parmesan cheese, house-dried tomatoes, roasted shallots and a port wine demi-glace; North Pacific salmon dynamite; and classic paella with shrimp, clams, mussels, chorizo and saffron rice. Cinnamon-seared duck with mixed fingerling potatoes and a blackberry demi-glace also grace the menu. A Mākena signature, carving stations of boneless leg of lamb marinated in herbs and garlic, an oven- roasted herb-crusted prime rib and crispy-skin whole suckling pig with Mang Tomas sauce will also be available, as well as made-to-order omelet stations with fresh garden garnishes and roasted meats.
