Kupu Maui’s Next Pop-Up Dinner Announced

Kupu Maui, the recurring farm-to-table pop-up dinner venue, has announced its latest event.

Held this Saturday, May 17, the Herbalicious Dinner at Evonuk Farms in Kula begins with a farm tour.

Learn about the herbs and other seasonal produce – yellow beans, kale, collards, chard, white sapote, pomegranate, red cuban bananas – grown there… and then taste some of them as part of a multi-course meal.

The menu is presented by Chef Anthony La Bua, the face behind the Maui Preserved brand of products, which also sources produce from the Evonuk farming family.

The food is served family style and begins with a dish of soft polenta, grilled flank steak, roasted beets and a pomegranate reduction.

Next is Middle Eastern baba ghanoush made from slow-roasted black beauty eggplants with fresh tahini and Meyer lemons accompanied by crispy assorted local vegetable chips; and followed by a fresh herbed pasta Bolognese with aged kiave-smoked Surfing Goat cheese.

The next round of dishes starts with a tenderloin roulade comprised of Black Forrest bacon-wrapped beef tenderloin with basil-herb macadamia nut pesto.

This is followed by  a garlic lemongrass marinated char-grilled chicken accompanied by roasted fennel and baby carrots with pignoli, sautéed kale and chard, and a seasonal salad made with Maui Preserved and Meyer lemon vinaigrette.

For a sweet finish, anticipate rosemary cornmeal shortbread, ginger cookies and macadamia chocolate chip biscotti washed down with vanilla and strawberry macnut milk.

Held from 4 to 7 p.m., all this decadence is $75 per person.

Seating is limited and reservations are required.

Organizers recommend diners wear casual attire including flat, comfortable shoes and bring a sweater or jacket.
