From decor to location to menu, the Kapalua restaurant aims to show its respect for Hawai’i from mountain to ocean.

There’s the historic canoe that serves as a centerpiece in the dining room, the wooden paddles adorning the walls and the carved screens that symbolize sugar cane’s structure under a microscope.

There’s the sweeping panorama of the Pacific, with Namalu Bay in Kapalua, spectacular West side sunsets and views that stretch to Moloka‘i.

There’s the food, known as “modern Hawaiian,” sourced from Maui and neighboring islands, with superior seafood, fresh greens and quality ingredients.

Then, there’s something new. A brunch uniting that decor, those views and the food for a special Sunday experience. Spanning from 7 a.m. to 1 p.m., Cane & Canoe’s brunch is called “a celebration of savory and sweet culinary delights.”

Chef David Viviano offers five brunch specials each week, in addition to the regular à la carte menu, like:

– Shrimp and grits with Kauai prawns, dashi grits, Portuguese sausage and poached egg
– Spicy tuna poke bowl served on sticky rice, scallion, napa cabbage and sweet soy sauce
– Tempura fried chicken and buttermilk waffle served with maple Sriracha
– Steak and eggs on a bed of sticky rice, house kim-chee and teriyaki sauce

There’s something else too! A build-your-own Bloody Mary Bar is available during the brunch on Sundays, with an assortment of liquor, mixers and all the trimmings to make your own custom concoctions. Diners start with an ice-filled glass and small carafe of their choice of vodka, including Maui’s own PAU Vodka and other vodka selections.

Ingredients include a choice of:
– Classic Bloody Mary mix or a seasonal house-made mix including a “Kim-chee Bloody Mary Mix.” Future mixes will include Tomatillo Bloody Mary, Green Bloody Mary and “Hong Kong Style” Bloody Mary

– Hot sauces: more than 20 from around the world and featuring some of Hawaii’s best

– Salts: featuring salts procured from around the Hawaiian islands

– Garnishes: everything from the classics like celery, olives, onions, smoked bacon, limes and lemons to unique options such as pickled okra, pickled pineapple, bacon-wrapped asparagus, beef jerky and jumbo prawns

The restaurant will switch out hot sauces and garnishes weekly based on seasonality and guest feedback.

Speaking of feedback, Viviano says the new brunch has been welcomed by both visitors and locals.

“Just a great way to come out on a Sunday, sit down and enjoy a beautiful atmosphere,” he adds.

Cane & Canoe opened when Montage took over the Kapalua Bay property more than two years ago. Viviano says he’s proud of the restaurant’s commitment to excellence.

“We use great products, proper technique, the food’s consistent, it’s flavorful, it’s beautifully presented and the atmosphere is second-to-none,” he explains.
