Spago Maui will be celebrating Chinese New Year a few weeks after the official date, but the menu will be no less momentous.  The Night Market on Monday, Feb.18 will showcase some traditional and custom culinary creations for Chinese New Year, along with interactive action stations and festive décor.

Chef de Cuisine Peleg Miron will help to serve up the delicious dishes, and says they include the best ingredients Hawai‘i has to offer.

“We will be cooking in front of guests starting from the pastured Peking ducks, suckling pig char siu, followed by dim sum,” explains Miron. “With the Hawaiian blue ocean glistening in the background, guests will enjoy grilled Kona Maine angry Lobsters, opapakapaka and Hawaiian moi.”

Spago Maui offers dinner nightly at Four Seasons Resort Maui in Wailea between 5:30 and 9:30 p.m. The Chinese New Year Night Market costs $75/per person.  Live stations include:

Char Siu Pork Belly
Roasted Duckling “Peking Style”
Ahi Tuna Spring Rolls
“Hawaiian Style” BaoBing
Grilled Angry Lobster

Prior to that, Spago Maui is also offering some dishes á la carte on Thursday, Feb. 14. Miron has included the classic Wolfgang Puck creations as well as his personal favorites on this Valentine’s Day menu.  Guests can choose from a range of dishes, such as:

Spicy Ahi “Poke”
Sauteed Hawaiian Coconut Crab Cake
Kula Pumpkin Risotto
Steamed Local Snapper
Ginger Macadamia Nut with Crusted Mahi Mahi
