Tomorrow, Thursday, June 12, Wailea’s Ruth’s Chris Steak House will host a five-course pairing dinner celebrating  the “king of grapes,” Cabernet Sauvignon.

“We invite guests to enjoy five worldwide cabernets from California to Chile to Italy illustrating how each wine is a unique expression of this grape selected from some of the world’s greatest growing regions,” said Helen Mackey, vice president of menu strategy and innovation for Ruth’s Chris Steak House.

“We look forward to a celebration of Cabernet and steak,” she added.

As to what, exactly, this celebration entails, the menu opens with a Wild Salmon Steak with tomato, basil  and white wine sauce and braised romaine. This dish is paired with Scalabrone dry rose from Bolgheri, Italy.

The second course features a Steak Consomme Tenderloin with rustic root vegetables and herb dumplings, which is served with a glass of Antica Cabernet Sauvignon from Napa Valley.

For your third course, enjoy Seared Tenderloin Salad with fresh mozzarella, beets and chimichurri pesto. The dish is accompanied by Hussonet Grand Reserve Cabernet Sauvignon from Maipo Valley, Chile.

It’s not over yet.

The fourth course offers Sizzling Filet Mignon with caramelized onions and Cabernet-balsamic reduction, which is then served alongside a loaded twice-baked potato and sauteed brocolini. It’s paired with Spring Valley Vineyards Frederick Cabernet Blend from Walla Walla, Washington.

In conclusion, the fifth course is an Artisanal Cheese Plate with a chocolate-cherry cluster, candied pecans and seeded flatbread accompanied by Il Bruciato Super Tuscan Cabernet Blend from Bolgheri, Italy.

Dinner will be served at 6:30 p.m. at a cost of $105 per person (plus tax and gratuity).
