New Cocktail Menu Debuts at Hyatt’s Grotto Bar
A new exclusive cocktail menu at the Grotto Bar at Hyatt Regency Maui features cocktails inspired by Hawaiian flavors and the surrounding environment of Lāhainā and the Pacific.
The new cocktail menu is only available at the Grotto Bar, located in a rustic cave setting and hidden between two waterfalls separating the resort’s two free-form swimming pools.
“In crafting the new cocktail menu, we wanted the drinks to reflect our bartenders’ personalities and our location,” said Jeremy Ryan, Food and Beverage Manager, Grotto Bar and ‘Ūmalu.
“The Merciless Sun, for example, is the English word for Lāhainā and is a homage to Lāhainā Town. To reflect the warm, dry climate of Lāhainā, we stirred together tequila, mango liqueur, our house-made jalapeno syrup, fresh lime juice and cucumber. It’s the perfect drink to enjoy in the cool Grotto Bar cave,” he added.
A few of the new menu items include:
· The Liquid Haupia – a play on the traditional Hawaiian dessert and made with rum, crème of coconut, pineapple juice and fresh orange. The crème of coconut adds a creamy texture like coconut haupia and delicately balances with the rum and pineapple juice, resembling a “skinny” version of a pina colada.
· Kekake – Kekake is the Hawaiian word for donkey and Grotto Bar’s version of a Moscow Mule. To add Pacific Rim flavors, the bartenders mixed together vodka, lime juice, as well as ginger and lemongrass to add Pacific Rim flavor.
· Bryan Would Go – named after one of the bartenders as it’s his favorite drink on the menu. This cocktail is made with Bombay sapphire gin mixed with guava liqueur, lime juice, mint and local coconut kombucha.
The Grotto Bar also serves light bites, draft and canned brews, and cocktails.
Happy hour specials are offered daily from 11 a.m. to noon. The Grotto Bar is open daily from 11 a.m. to 5 p.m.
