Join us at ‘Umalu at Hyatt Regency Maui Resort and Spa on Friday, June 20, 2025, for an inspired evening of island flavors and fine wine. The latest installment of the resort’s Aloha Plate and Pours series features a four-course al fresco dinner showcasing local culinary artistry and a curated selection of Decoy Wines, known for their expressive Sonoma Coast varietals.
Crafted by Chef Ryan Ferguson and Chef Gevin Utrillo, the menu highlights the vibrant flavors of Maui alongside the refined character of California wine country. Guests will enjoy Tomato Gazpacho with lobster and lemon oil, Hamachi Crudo with local mango and jerk vinaigrette, Peppercorn Spiced Peking Duck Breast with foie gras demi, and Braised Pork Cheeks with smoked pea risotto. A refreshing Hibiscus-Yuzu Granita and an indulgent dessert cart round out the experience.
Between courses, guests can take part in lighthearted games and playful surprises, adding a fun and interactive element to the evening.
