Opus One Wine Dinner at the Four Seasons

On May 6th the Four Seasons Resort in Wailea will host a wine pairing dinner featuring celebrated wines from Opus One Winery in Napa Valley, CA.
The original founders of Opus One Winery, Robert Mondavi and Baron Philippe de Rothschild, first met in Hawaii before launching the vineyard, so the resort found it appropriate to introduce guests to the winery’s precious vintages alongside delicious food.
The dinner will be held under the stars on the resort’s Oceanfront Lawn and will feature creative cuisine prepared by Four Seasons Maui Master Executive Chef Roger Stettler. The cost is $350.00 per person.
Starting at 6:30, the event will include a greeting by Opus One’s Winemaker Michael Silacci and a four-course meal, where Silacci will discuss the sequence and pairings of the wines to complement the chef’s menu. All choice wines have been selected between 1981 and 2007.
Menu highlights include Profiteroles filled with Smoked Salmon Mousse, Maine Lobster and Scallop “Blanquette,” and Braised Oxtail.
Guests will then finish the evening of indulgence with a sampling of sumptuous sweets and cheeses prepared by Four Seasons’ Executive Pastry Chef Rhonda Ashton.
