Chef Anthony Russo, the founder of dining concepts that include Russo’s New York Pizzeria and Russo’s Coal-Fired Italian Kitchen, will expand the brands’ footprint in the Hawaiian islands—including two locations on Maui.

The restaurants will add 50 to 60 jobs to Maui’s economy.

A formally trained chef who opened his first Russo’s New York Pizzeria in 1992 and later introduced the upscale Russo’s Coal-Fired Italian Kitchen, is continuing his growth plan in key markets.

Russo’s Restaurants is a 47-location national and international franchisor of the fast-casual and casual dining brands Russo’s New York Pizzeria and Russo’s Coal-Fired Italian Kitchen.

Chef Anthony has created his concepts from years of applying his unique, family recipes featuring New York-style pizza, along with a broad variety of handcrafted pasta creations, calzones, salads, sandwiches, soups and desserts, reflecting his commitment to his New York roots “where food and family come first.”

Chef Anthony’s unique menu features its signature coal-fired pizzas, along with a broad selection of handmade pasta dishes, made-from-scratch Italian selections and fresh, all-natural salads—all true to Chef Russo’s Italian roots.

“Hawai‘i’s first franchised Russo’s restaurant has become the favorite choice for authentic Italian in the Aloha State,” said Chef Anthony. “Our plan is to add two additional locations to Maui, Honolulu and Kaua‘i over the next 12 to 18 months, resulting in a strong showing of Chef Anthony’s restaurant concepts. Each location will add 25 to 30 new jobs and boost the local economies while enhancing the city’s revenue stream.”

A Coal-Fired Italian Kitchen is already exists in Ewa Beach, operated by franchise partner Robert Carlisle.

“With Hawai‘i’s growing economy and room on the islands for more of our authentic Italian options, the state offers access to promising locations,” said Chef Anthony. “We anticipate a very successful expansion with our established brands and a management team committed to supporting our franchisees every step of the way. We’re confident in our future with Hawai‘i.”

Russo’s Restaurants offers franchise opportunities for entrepreneurs interested in brands that are entirely chef-created, chef-inspired and chef-driven.

Interested franchise prospects should have between $600,000 and $1 million net worth per location, and $175,000 to $400,000 in liquid assets.
