
In honor of Earth Day on April 22, 2026, Kō Restaurant at Fairmont Kea Lani invites guests to an intimate evening of world-class cuisine and sustainably produced wines with “Kō & Vine,” a five-course dinner celebrating mindful stewardship of land, vineyard, and table. The exclusive event, limited to 30 seats, will pair the culinary artistry of Executive Chef Matt Dela Cruz with a curated selection of wines from Jackson Family Wines, guided by Master Sommelier Michael Jordan.
Set within Kō’s lush garden enclave, the dinner highlights seasonal, locally sourced ingredients thoughtfully paired with wines from vineyards practicing regenerative agriculture, responsible water management, and climate-conscious viticulture. Each course tells a story of heritage, sustainability, and culinary innovation, reflecting Kō’s sugarcane-era roots while showcasing Chef Matt’s contemporary interpretation of Hawaii’s rich culinary traditions.
“Every ingredient we use – from Kona lobster to locally grown produce – is chosen with both flavor and intention in mind,” said Executive Chef Matt Dela Cruz. “For this dinner, we’ve created dishes specifically to complement each wine, highlighting the natural synergy between the land and the table. It’s a celebration of Hawai‘i’s abundance, where thoughtful sourcing, cultural inspiration, and culinary creativity come together to honor the ʻāina and the stories behind every bite.”
The wine program, “Wines with Purpose,” is part of Jackson Family Wines’ Rooted for Good initiative, a decade-long commitment to regenerative farming, climate-positive practices, water stewardship, and global sustainability leadership. Guiding the experience is Master Sommelier Michael Jordan – one of just 15 individuals in the world to hold both the Master Sommelier and Certified Wine Educator diplomas – who brings a deeply personal connection to the islands, having grown up on Oʻahu and previously serving as chef at Longhi’s Lahaina in the 1970s. Guests will experience wines that not only complement each course, but also reflect a legacy of craftsmanship, education, and environmental responsibility.
