The Sheraton Maui Resort & Spa has opened Isolana, a new signature dinner restaurant combining Italian cuisine with locally sourced Maui ingredients, the resort announced Wednesday.

Isolana, which means “islander” in Italian, will offer open-air dining along Kāʻanapali Beach. The restaurant’s name and concept draw on the Italian idea of il dolce far niente—”the sweetness of doing nothing”—according to the resort.

“With Isolana, we wanted to create a restaurant that feels connected to both Maui and the Mediterranean,” said Kaleo Kenui, general manager of Sheraton Maui Resort & Spa, in a statement. Kenui said the restaurant aims to pair Italian cooking with local ingredients and encourage guests to “linger a little longer.”

The menu features produce from Maui farms, including Waiheʻe Valley Plantation and Hua Momona Farms, along with ʻulu and locally grown mushrooms. It is organized into shareables, crudos and salads, pasta, seafood, land dishes and sides, with handmade pasta as a centerpiece.

Signature dishes include lasagna made with Maui Nui venison bolognese, garlic béchamel and parmigiano reggiano, and cacio e pepe served with lobster, chives and umami crumble. Seafood offerings include pan-roasted kanpachi paired with Kamuela tomatoes from Kawamata Farms on Hawaiʻi Island, and umami-crusted ahi served with mushroom risotto and shiitake bacon. Other entrées include a Kurobuta pork chop with calamansi vinaigrette, a citrus-brined half chicken, and a vegetarian chickpea panisse.

The beverage menu includes cocktails such as Flight 1963, named for the first nonstop commercial flight from the Mainland to Kahului Airport, made with Kupu whiskey, amaro, lemon and pineapple. Coffee service will feature French press coffee from Mālama Maui Kona Estate Coffee.

The restaurant was designed by Honolulu-based architecture firm AHL, with a color palette and design elements the resort said were inspired by the surrounding reefs and coastline.

Sheraton Maui Resort & Spa sits on 23 acres of oceanfront property near Puʻu Kekaʻa, also known as Black Rock. Operated by Marriott International, the resort is known for its nightly lele kawa cliff-diving ceremony.
