“When I first got here I made the rounds of all the Mexican restaurants on Maui. This was by far the most authentic.”


Bottling artisan honey at Kalepa. After extracting, we pass it through a coarse stainless steel mesh, and then through cheesecloth into the Stainless Steel bottling tank. We let it settle for a week or so, to get air bubbles and large wax particles to float to the surface for skimming before we bottle it in freshly washed & dried wide-mouth canning jars.
